Recipe: Spinach Lentil Indian Soup (Daal)

Hi guys! For dinner tonight I just had this simple Indian soup. Normally people have this with rice or roti (an Indian flat bread) but I had it on it's own and am saving calories for a small square of chocolate later, hehe!

So here's how you make it, courtesy of my mom's recipe!

Ingredients:
Yellow lentil and red lentils, 1/2 cup each, or whatever proportion you like
Ginger, garlic
Salt, pepper, paprika to taste
1/2 tsp turmeric
Tomato, any kind (I used grape tomatoes pictured here
Spinach, washed and cut

Just put everything into 3-4 cups of water in a big soup pot and boil it slowly for half an hour. Lentils should be cook through and spinach wilted. At the end you can mix in 1/2 tsp of olive oil and garnish with coriander leaves. That's it!

Remember, we will succeed together, one day, meal and bite at a time!
