Recipe: Spinach Spanakopita

Hi guys! Well, I wanted to share this really great recipe that I read in the current issue of Weight Watchers magazine. I'm not a member anymore, nor do I subscribe to the magazine, but I've bought the magazine before once a while and I'm never disappointed. 

There are ALWAYS wonderful stories of success from real people, good ideas on how to eat better and then a whole bunch of interesting recipes. I always expect the recipes to be boring and blah, but this time around I earmarked several pages of recipes to try. And this one couldn't be easier! 

It's a pie shaped spinach spanakopita, Greek inspiration! You just use frozen phyllo dough and make a mixture of thawed spinach and some feta cheese. I don't like feta so just grated down some swiss that I already had. And you could throw in other veggies as well, I would just say to chop them finely. 

Just layer out a few sheets on the bottom of a baking pie pan, spray down with cooking spray, spread the spinach mixture, and then pile on more layers of the phyllo and spray with cooking spray between sheets. And bake! I took a photo of the recipe from the magazine so you have it, hope you can read it.

And voila, the finished product. Isn't it just SO pretty! I think mine looks so much like the photos in the magazine :)  The light crispy layers of crumpled dough on top are just so lovely. And the spinach was great too. What a nice easy way to get in a good veggie and only dirty 1 cooking pot too ;-)

Recipe: Spinach Lentil Indian Soup (Daal)

Hi guys! For dinner tonight I just had this simple Indian soup. Normally people have this with rice or roti (an Indian flat bread) but I had it on it's own and am saving calories for a small square of chocolate later, hehe!

So here's how you make it, courtesy of my mom's recipe!

Ingredients:
Yellow lentil and red lentils, 1/2 cup each, or whatever proportion you like
Ginger, garlic
Salt, pepper, paprika to taste
1/2 tsp turmeric
Tomato, any kind (I used grape tomatoes pictured here
Spinach, washed and cut

Just put everything into 3-4 cups of water in a big soup pot and boil it slowly for half an hour. Lentils should be cook through and spinach wilted. At the end you can mix in 1/2 tsp of olive oil and garnish with coriander leaves. That's it!

Recipe: Tilapia Fish with Citrus Salad

Fish, it's what's for dinner! My mom made a really nice, yet simple curried fillet of tilapia fish with a yummy citrus salad. The combination of spicy fish and refreshing organge in the salad perfectly complement one another. Mom said she watched a recipe on Giada and got inspired, I love this! 

  

Later, I'm going to try to create a low-cal version of apple pie, Pear Pie! Using fresh pears from out tree in the backyard. Stay tuned for that!

How to create this delicious and healthy dinner: 
FISH
  • Wash the fish pieces, we used frozen store-bought fillets
  • Season with, lemon, salt and pepper, turmeric, mustard powder, coriander leaves chopped, olive oil and garlic powder
  • Heat a little olive oil in a shallow pan, and gently cook on low heat, covered, 2 mins on each side
  • Done!
SALAD
  • Chop lettuce leaves
  • Peel an orange or tangerine
  • Slice into small pieces or separate the sections (you can also use a grapefruit!)
  • Take the last slice and squeeze out the juice of it
  • Add scallions if you like
  • Season with salt, pepper, lemon, a splash of orange juice, mustard powder and ground flax seed
  • Done!

The cool part about this is, if you save a little salad and tangerine section for your last bite,  the orange beautifully sweetens your mouth, like a little dessert, but also cleanses your palette. so you don't really feel like eating anything new afterward. Neat, right?
